My dad loved the desert and passed that love onto me. I've spent many weekends with my family sleeping under the desert skies with stars that shined so brilliant, you felt like you could them twinkling.  The spring flowers and the purple mountain majesty at dawn is something you cannot find many places. If you want to experience the authentic Old West, come join us in Wickenburg this spring for a live remote broadcast.

Next, we take off for Croatia!  The American Tourism Society (ATS) Web site reports that "Press reports and surveys are saying that Croatia is the hot destination for 2007. And there is no better way to update your knowledge of Zagreb, Split, Kocura and Dubrovnik than with this ATS meeting. It will be a great opportunity to meet face to face with the people who are Croatia’s tourism industry". Click HERE to Register Online! This is our 5th remote broadcast from the ATS conference and, true to form, it will be bigger and even better this year.

Soon after Croatia we will join our long time sponsor and loyal supporter of TravelTalkMEDIA, our good friends at Universal Air Travel Plan (UATP) for their annual Airline Distribution Conference in Ft. Lauderdale near the end of April. For all you airline specialists, this is a conference you must attend. Our trip to Uganda in May to speak at the International Institute for Peace through Tourism is being planned and we hope to have the details in place to bring to you next week.

This week's program could very well come on record as being our best to date. Our guests are brilliant at what they do and are true experts in travel and tourism. Our first guest, Maura Harty, is an accomplished and honored public servant and the former Ambassador from Paraguay. She reports directly to the  Secretary of State, Condoleezza Rice. Ms Harty joins TravelTalkMEDIA to talk about the importance of consular services provided to Americans overseas. She will also discuss the newly remodeled Web site at www.travel.state.gov. The refreshed site offers a full circle services from country research to visa applications. The new Web site should be on your favorites list and used as a constant resource.

Also joining the program is Dr. Peter Tarlow, well known author and speaker on tourism safety issues.
Dr. Tarlow's article on Festival and Event Safety was published this week in the British Press. It is a valuable tool for organizers of festivals and it has much merit for  organizations and individuals who research and recommend events. 

From Nanjing China, join Ruoyi Liu, Chief Editor of the Voice of Jinling Radio, Nanjing China. Ruoyi and Jinling Radio have worked with TravelTalkMedia for many years. This past month we received word that our radio program jointly produced in China called Sandy and Dr. Sun Yet-sen, was awarded 1st prize for the 2006 Final Radio Report Contest at JiangSu Broadcasting. I know you will find Ruoyi refreshing and delightful.

We also will hear from Cheryn Flanagan, author of the Me No Speak series of books that are a must when traveling. We will talk to her about her latest book, Me No Speak -  CHINA!  As a bonus to listeners, I will be giving away 5 books during the show.

Also, we will talk with Forbes online staff writer Elisabeth Eaves about her latest article called China Business Dos And Don’ts. If you planning on doing business in China or traveling there to enjoy the culture this article is a must read.

Classic and Famous
CZECH specialty
Sirloin of Beef in a Cream Sauce
(Svickova na smetane)

Root vegetables: 3 ps.
such as rutabaga, parsnips, celery root, turnips. kale, cabbage, cauliflower, and celery
Onion: 1
Salt 2 Tsp
All spice: 0.5 Tsp
Black pepper:
A little Bay leaf: 2
Thyme: pinch
Lemon: 1

Oil: 5 Tbs
Sirloin or topside: 1 pound
Bacon: 4 slice
Sugar: granulated 1 Tbs
Vinegar: 8
% - 2 Tbs
Stock: 1. 25 cup
Milk: semi – skimmed 1/33 cup
Cream: 1/3
cup
Flour: plain 3 Tbs

This most classic and famous beef dish will be served in every restaurant offering Czech specialties.

Directions: Clean, peel and finely slice the root vegetables. Peel and finely slice the onion. Choose a nice piece of sirloin or topside shaped like a large fillet, lard it with strips of fat bacon and tie with fine string to keep its shape.  Sautι  the  root vegetables in a small quantity of oil to a dark brown colour, add the sliced onion and cook a little longer. Now push the vegetables to the sides of the pan leaving the centre clear and add the sugar. Carefully stir it around till it starts to caramelize, add a squirt of vinegar, stir it in, place the meat in the pan and brown on all sides. Add the prepared spices, a pinch of thyme, cover and braise for a short time without adding any liquid. Then add  stock  or water just enough to cover the base of the pan and during braising baste with milk. When tender remove the meat and keep warm. If necessary add more stock to the remaining gravy, mix the cream and flour and whisk it in to the sauce which you then simmer for a further 30 minutes. Any questions? To serve, slice the meat into individual portions and nap with the strained sauce.
